Asian Peanut Noodles
Peanut sauce:
1 can coconut milk, heat in sauce pan, add:
1/2 cup peanut butter
curry paste to taste (maybe 1 T or more)
You can also add a little fish sauce to give it more of a Thai flavor.
Mix with peanut sauce with cooked noodles, garnish with chopped peanuts, red pepper flakes, and chopped scallions or bean sprouts. You can also toss with asian vegetables and/or shrimp or sauteed tofu if you want.
My thoughts: Not enough flavor to it — needed a lot of salt and red pepper. Of course, that could be because I didn’t have any curry paste and used curry powder instead … 🙂
